Wine-growing house Vinohrad fulfils exactly this philosophy step by step with an objective to produce unique, fine and delicious wine from Pálava where particularly Riesling, Pálava and Vinohrad rosé have their own spirit, exceptionality and sophistication.
Vineyard is reproductive cell of quality
Terroir/land of vineyard lines in Pálava are purely given by endemic soil, where clay - calcareous primary loess predominate, frequently up to 35 % of Ca in soil. Thus bunches of grapes bear fruit in the vineyard from which we produce distinctive wine with mineral drawing and fresh acid. Climate in nature reserve Pálava is warm and dry. Slopes have immense ability to accumulate heat energy that creates optimal condition for grapevine growing season and for bunch of grapes maturation during sunny days. Regular load of vine bush with bunches of grapes and protection in accordance with biospheric reserve guarantee us that bunches of grapes are sound ripe and of top-quality.
From bunch of grapes to wine.
September is the most important month as for grapevine growing season. Grapevine simultaneously degrade acids when sugar deposit in berries. A Bunch of grapes is ripe when sugar and acid are in an accurate mutual ratio. However time of maturity cannot be the identical with harvest. We gather some bunches of grapes when not rip others when rip or overripe.
Thus white wine arise by stemming, pressing with soft force, must analysis, sedimentation, vinification and controlled fermentation. Afterwards immature wine is individually trained, after bottling it ripens in conventional wine cellars where it waits for its customer.
We produce rosés from blue bunches of grapes using cultivar Zweigeltrebe, primary aromatic and gustatory spectrum with fruitiness, flower tones, we get freshness and harmony from bunches of grapes using modern oenological procedures.
Quality of red wine depends on among others quality of extraction of aromatic and gustatory matters from which the most important is particularly tannins - these are the spirit of wine. We only rack our brains how to get the best of them into wine. Our Svatomartinské passes through carbonic maceration, Premium range passes through special vinification, through malolactic acid fermentation, fine oxidation - maturation in wooden wine cask.
